Candied black olives

Candied black olives in brine are ripe olives that display a dark purple colour with hues going from red to black.

These olives have an antioxidant effect which is stronger than the other ones, they contain a considerable amount of iron (roughly 3 mg of iron per 100 mg of olives) and fat and provide a higher calories, vitamins and mineral salts content.

Turning colour olives (or purple ones)

That kind of olives is picked before the full ripeness of the fruit, as far their colour is concerned, it can vary from brown to purple.

They are processed in brine only and can be kept up to three years, that is a fact which concerns all olives varieties.
