Known as a symbol of peace and longevity, the olive tree is a mythological tree, and even if it can be found all over the world, it mainly produces olives on the shores of the Mediterranean. The olive tree found in Morocco a land favourable to its development a long time ago.<\/p>\n

Planted in this region for thousands of years, it has adapted to the stony and dry soil of the Atlas mountains, to a point its olive grove has become the most famous in Morocco.<\/p>\n

\nCultivating the olive tree, an obstacle course<\/h2>\n

The olive tree can reach a five to ten-metre height, but to make the care and the fruit picking easy, it is usually kept at a three to seven-metre height. It is an everlasting tree but it develops quite slowly. It has a gnarled trunk with a hard and dense wood whose grey bark is cracked at the surface<\/p>\n

It has an evergreen foliage, except that once every three years during the Summer drought, the leaves get yellow and fall from the tree. The olive tree blossom only lasts one week between May and June, the flowers come out into bunches, they are small, oval and white, they have a light fragrance and they are sensitive to cold and wind.<\/p>\n

The olives development and how to process them.<\/h2>\n

Do you know that only 5 per cent of the olive tree flowers give birth to a fruit? In fact, olives are formed between June and November, it is green at the start of its development, then it gets a red-purple colour and turns into black when it is fully ripe.
\nA preparation based on salt allows to take its bitterness out which makes it edible. Thanks to the high content in fat, most of the crops are used to make olive oil. The rest is used for preservation and aimed at other kinds of preparations.<\/p>\n","protected":false},"excerpt":{"rendered":"
